I am constantly making variations of these. They can be an energy snack, a breakfast bar, a dessert, a protein-filled power-house morsel to get you through the day, whatever you need they can be. I change the sweetness and ingredients depending on how I feel. And honestly, depending what ingredients we have around!
These were a great version with oats, hemp hearts, pumpkin seed butter and raisins making them hearty and earthy as well as filled with good omegas and some protein.
2 1/2 c. brown rice crisps
1/2- 2/3 c. quinoa puffs
1/2 c. rolled oats
2/3 c. hemp hearts
1/4 c. raw, vegan protein powder (I use natural unsweetened Sunwarrior)
1/4 – 1/2 c raisins (or dried fruit of your preference)
1 c. rice syrup
1/2 c. tahini (sesame butter)
1 tsp vanilla
1/4 tsp Icelandic sea greens powder
Mix dry ingredients in a bowl. In a saucepan heat rice syrup, tahini, vanilla and sea greens. Let lightly bubble in a simmer while stirring for a minute and then pour mixture over dry ingredients. Mix well until all dry ingredients are covered with rice syrup mixture. Press into glass pan or container and let cool. Slice into bars or squares.
You can wrap individually or freeze bars. They are crispy when cold and slightly bendy and soft when room temperature.
