coconut macaroons

A peaceful rainy day and a sick kid calls for the only kind of productivity possible: quick and simple cooking, a camera in hand and the soundtrack to your springtime filling your space. These are the easiest thing you will ever make. And they are amazing!

As usual, I use alternative sweeteners so they don’t have any sugar in them. But shhhhh your friends will never know.

Here’s how:

  • 1/4 c rice syrup
  • 1 T maple syrup (optional)
  • 1 tsp pure vanilla extract
  • 2 egg whites
  • 3 c coconut (unsweetened)

In a bowl beat the egg whites until they appear frothed. Add the rice syrup, maple syrup and vanilla and stir until combined. Combine the coconut and mix. Using a tablespoon, spoon T size rounds onto a parchment lined cookie sheet. Bake at 350° for 12-15 minutes.

Dip or drizzle with melted chocolate if you like!
